Abstract：
速冻食品因其符合当代人们对绿色、方便、保健食品的三大要求,占人们日常食物消费中的比例越来.本文分别从速冻食品和速冻设备两个方面,综述了速冻食品的起源、发展、优点以及影响速冻食品质量的因素,并且从蒸发器的传热传质、CFD模拟和高压冷冻方面对速冻设备的研究进展进行了综述,并对以后速冻食品和速动设备的发展方向展望.
