    白酒是我国传统的民族工业，因其独特的生产工艺在世界蒸馏酒中独树一帜。很多学者专家在酿酒功能菌上做了很多研究，也花了大量时间，在功能菌筛选、鉴定、应用上也取得了很大的成绩。
